Tuslob Buwa which means “dip in a bubble” is a popular street food that originated in the neighborhood of Pasil Cebu City. Its key ingredients is the pork brain and liver which is sautéed with onions, garlic, chili’s and soy sauce to give it a savory taste and aromatic smell to make you crave. It is best paired with puso – “Hanging Rice” and soda drink like (coke, spice, pepsi, mountaindew) to quench your thirst.

You’ll usually only pay for the puso, which costs around ₱5 per piece, while the bubbling wok is shared by everyone gathered around the street cart. If you’d rather enjoy it in your own serving, several local restaurants now offer Tuslob Buwa in a more traditional sit-down setting—but nothing quite matches the authentic atmosphere of enjoying it right where it all began: on the streets of Pasil.

Tuslob Buwa become a streetfood phenomenon and we can remember as the “first when the name become trending” was in Azul, a place serving the best Tuslob Buwa in the city. In 2020, there was even a debate as to the origin of Tuslob Buwa describe by Sunstar as trademark draws uproar online.
